Vegan!!

Okay. So a month ago I started a vegan diet and this is my first vegan dessert!
This was actually two of the five special desserts on my special menu for a project I did for class.
It was not vegan, but I changed it so I could eat it. 


This is a vegan chocolate cake and vanilla cake with fresh strawberries and coconut whipped cream, then drizzled with chocolate sauce.

Here is the screen shot of the five desserts. So these two dessert are Taeyang and Daesung.
Which dessert should I make next? Or maybe I should make something on the regular menu part.
Trying to change everything from this project to vegan and make them.
I will probably talk more about this project when I fix if it up some more and add more items to it.

Baby Shower

Another cake from work. 
This order was taken from another store. The order sheet did not say what kind of decoration.
They wanted 'Welcome Baby Bernard' written on it, so I guessed it was a baby shower and made this.


This is a chocolate cake with Oreo frosting, decorated with whipped cream and Oreos! 
The letter was written to look like the Oreo letter, but it did not turn out so well...

Black History Month!

I made this cake at work. 
I costumer came in and said she wanted a full sheet cake.
She did not want any decorations and only wanted "Happy Black History Month" on the cake in red, yellow, and green (the colors of a flag).
It would look too plain if I just did that, so this is what I did.



I actually spelled month, mouth. I did not notice until the 15th person looked at it and said something was wrong... I knew it looked weird when I finished but did not see it... Good thing we catch it before the costumer came.

Hello Kitty Cake!!!

Ok... It's my mom's birthday and she loves Hello Kitty. Plus, she is like a teenager. So here is a princess Hello Kitty birthday cake.
I was sick and feeling like crap when I made this cake, so not very proud of this cake. But it still turned out okay. 

This is a Vanilla sugar free cake with sugar free strawberry jam and dark chocolate ganche.

Birthday

Even though it is long passed. Here it is my birthday cake and my cousin's kid's birthday cake. We shared the same birthday only I'm 21 years older...

My Cake

Irish car bomb chocolate cake, covered with white fondant and painted with food coloring.
Inspired by Big Bang's G-Dragon car from his and Taeyang's song 'Good Boy'. 


Aiden's Cake

This is an ice cream cake with chocolate pieces. 
Aiden is allergic to eggs so we had an ice cream cake even though it is cold out.
I accidentally smashed it when putting it in the carrier before I took a picture.

Mr. Kenji's 3rd Birthday

Dinosaur Cake!!!
Only the back of the body was cake. It was chocolate cake with cream cheese filling. The rest was homemade rice krispie treats. It was cover with white modeling chocolate, then air brushed with food coloring.


It was a little disappointing. Kenji ended up being afraid of the cake and ran away. It took me so long to make it... At least, the other kids and adults liked it.


Some teeth were knocked out during the transporting. 


Then the rest of the teeth was pull out and eaten by the crazy kids.

More Cakes!! (Spring)

Since it is Mother's day and Spring is beginning, here are some cakes made for Spring! These were cakes made a few weeks ago and I did not write down which cake was which. One is lavender cake with white chocolate cremeux and the other is an orange chiffon cake with cherry pie filling.


Spring flower basket with butterflies. It was my first time making the basket weave. It does not look very good, but not a complete fail. 


Cherry Blossom Cake. I made tons and tons of the flower, but went with the neat and simple route. I was originally going to load the cake with the flowers, but Chef's voice came in my head. "Less is more" It still looks nice, right?

Made both of these cakes at school. Cake number 1 was a practice for my block practicum and cake number 2 was a cake that I did not get a chance to finish before the practicum. Thought I had time to finish both, but was wrong. I managed to cover both of the cakes in fondant and rushed to decorate cake number 1. Cake number 2 was decorated by my little sister, when I brought it home.

Gum Paste Flowers and Wedding Cakes

 First cake in wedding cake class. But it's not real! Its foam inside. Brought it home and My mom wanted to eat it...

First real and 2-tiered cake. Vanilla cake with swiss buttercream decorated with hydrangeas and piped swiss dots with royal icing.

First practice exam cake.

Third and last practice exam cake. 


Sketch of final exam cake. It was a GD&TOP theme cake. Not all of the details was on this sketch. 

Roses were red, black, and half red half black. The writing on the cake was the lyrics in 'Baby Goodnight' by GD&TOP.(Took me forever to pipe and my hand was in pain for a few days.) The red was GD's lines and black was TOP's lines. On the middle tier was the "groom" and "brides" initials.(sorry oppas!) SC for Seunghyun Choi (TOP's real name) and JK for Jiyong Kwon (GD's real name).

Here is a better look at the toppers, all made from gum paste. "Groom" is TOP and "bride" is GD. 

 I used TOP's look from 'Doom  Dada'.


GD's look from 'Crayon' and 'Coup D' Etat'. GD's hair was from 'Crayon' when he dress up like a lady. His dress was supposes to be designed to look like the suit he wore in 'Coup D' Etat' but the front was covered and u can't see it and I forgot to add the details to the back of the dress (I thought the back would be covered enough to not have to do that, which I regretted after he was put together).

The positioning of the two was inspired by naughty GD doing things to "TOP" at their fan meeting.

Plated Dessert


Plated dessert final on Bavarois with orange and chocolate sauce garnished with orange tuiles, pulled sugar, and chocolate decor.
Chef was not so happy about this one. I just went a little over board with the music theme... Ok maybe a lot. Food needs to talk for itself. Less is more. I need to go simple.

Mochi filled with candied rice krispies.
This was the final for my special needs class. The candied rice krispies made it crunchy, which was a little creepy.

Green Tea Longan Danish for my creative viennoiserie assignment in breakfast pastry class. It was filled with a green tea pastry cream and Longan filling and glazed with a longan glaze.

Macarons filled with Raspberry White Chocolate Ganache


Had just learnt to make macarons the day before and make it twice that day. Then the next day pop practicum on macarons and eclairs. 12 each in 2 1/2 hours. 


Final Practicum. I had 3 days to make 12 each of macarons, eclairs, bouchee, merginue tartlets, and sablee cookies. I had some much time so why spend the extra time on garnishing. I didn't think it was a big deal since they gave us so much time, but Chef was so excited when she saw it. Then I noticed everyone just went with dusting with the raspberry powder. I love macarons. They are fun to garnish, but there needs to be a better way to making them...
