Made both of these cakes at school. Cake number 1 was a practice for my block practicum and cake number 2 was a cake that I did not get a chance to finish before the practicum. Thought I had time to finish both, but was wrong. I managed to cover both of the cakes in fondant and rushed to decorate cake number 1. Cake number 2 was decorated by my little sister, when I brought it home.

Gum Paste Flowers and Wedding Cakes

 First cake in wedding cake class. But it's not real! Its foam inside. Brought it home and My mom wanted to eat it...

First real and 2-tiered cake. Vanilla cake with swiss buttercream decorated with hydrangeas and piped swiss dots with royal icing.

First practice exam cake.

Third and last practice exam cake. 


Sketch of final exam cake. It was a GD&TOP theme cake. Not all of the details was on this sketch. 

Roses were red, black, and half red half black. The writing on the cake was the lyrics in 'Baby Goodnight' by GD&TOP.(Took me forever to pipe and my hand was in pain for a few days.) The red was GD's lines and black was TOP's lines. On the middle tier was the "groom" and "brides" initials.(sorry oppas!) SC for Seunghyun Choi (TOP's real name) and JK for Jiyong Kwon (GD's real name).

Here is a better look at the toppers, all made from gum paste. "Groom" is TOP and "bride" is GD. 

 I used TOP's look from 'Doom  Dada'.


GD's look from 'Crayon' and 'Coup D' Etat'. GD's hair was from 'Crayon' when he dress up like a lady. His dress was supposes to be designed to look like the suit he wore in 'Coup D' Etat' but the front was covered and u can't see it and I forgot to add the details to the back of the dress (I thought the back would be covered enough to not have to do that, which I regretted after he was put together).

The positioning of the two was inspired by naughty GD doing things to "TOP" at their fan meeting.

Birthday Cakes

Plated Dessert


Plated dessert final on Bavarois with orange and chocolate sauce garnished with orange tuiles, pulled sugar, and chocolate decor.
Chef was not so happy about this one. I just went a little over board with the music theme... Ok maybe a lot. Food needs to talk for itself. Less is more. I need to go simple.

Mochi filled with candied rice krispies.
This was the final for my special needs class. The candied rice krispies made it crunchy, which was a little creepy.

Green Tea Longan Danish


Green Tea Longan Danish for my creative viennoiserie assignment in breakfast pastry class. It was filled with a green tea pastry cream and Longan filling and glazed with a longan glaze.

Macarons filled with Raspberry White Chocolate Ganache


Had just learnt to make macarons the day before and make it twice that day. Then the next day pop practicum on macarons and eclairs. 12 each in 2 1/2 hours. 


Final Practicum. I had 3 days to make 12 each of macarons, eclairs, bouchee, merginue tartlets, and sablee cookies. I had some much time so why spend the extra time on garnishing. I didn't think it was a big deal since they gave us so much time, but Chef was so excited when she saw it. Then I noticed everyone just went with dusting with the raspberry powder. I love macarons. They are fun to garnish, but there needs to be a better way to making them...

Mother's Day

Late Mother's day post. It's a chocolate cake with creme anglaise buttercream covered with fondant. Since we wanted everyone to take part in the making of this cake, we used stencils to make the decoration pieces. To the four mothers in my family! Linda, Laura, Lisa, and Jenny!
