Birthday Cakes

Little Kenji's first birthday with Winnie the Pooh themed.
He is turning 2 soon, but this year I'm not going to make the cake. 
This was before I even started learning about cakes in school!

Plated Dessert


Plated dessert final on Bavarois with orange and chocolate sauce garnished with orange tuiles, pulled sugar, and chocolate decor.
Chef was not so happy about this one. I just went a little over board with the music theme... Ok maybe a lot. Food needs to talk for itself. Less is more. I need to go simple.

Mochi filled with candied rice krispies.
This was the final for my special needs class. The candied rice krispies made it crunchy, which was a little creepy.

Green Tea Longan Danish


Green Tea Longan Danish for my creative viennoiserie assignment in breakfast pastry class. It was filled with a green tea pastry cream and Longan filling and glazed with a longan glaze.

Macarons filled with Raspberry White Chocolate Ganache


Had just learnt to make macarons the day before and make it twice that day. Then the next day pop practicum on macarons and eclairs. 12 each in 2 1/2 hours. 


Final Practicum. I had 3 days to make 12 each of macarons, eclairs, bouchee, merginue tartlets, and sablee cookies. I had some much time so why spend the extra time on garnishing. I didn't think it was a big deal since they gave us so much time, but Chef was so excited when she saw it. Then I noticed everyone just went with dusting with the raspberry powder. I love macarons. They are fun to garnish, but there needs to be a better way to making them...

Mother's Day

Late Mother's day post. It's a chocolate cake with creme anglaise buttercream covered with fondant. Since we wanted everyone to take part in the making of this cake, we used stencils to make the decoration pieces. To the four mothers in my family! Linda, Laura, Lisa, and Jenny!
